From the entrance at 72, 62 just take left turns until you see wooden stairs. Not the most efficient route, but it works.

I had a great deal of difficulty finding the above npc with the current directions, so I will try and clarify. From the entrance, proceed straight along to the large central chamber. As you enter,you will see a large piece of machinery with logs hanging from it. The tunnel you want is just behind it. She is straight ahead from there standing on a wooden scaffold.

Please be aware that there is an upper and a lower entrance. She is in the upper entrance that is to the right of the quest giver as you face him. Then follow AmberD's directions.

Step 2. http://avan-tech.co.uk/images/wow/mix2.png (Follow the cave dead straight , then ahead no left turn or right turn!)

Step 3. http://avan-tech.co.uk/images/wow/mix3.png (Of what looks like a dead end isnt.. and to the left she is located up the wooden stairs)

just a side note while searching for her. the peons dont attack if they are holding the ore. the overseers do attack however. makes it a little easier if you are just searching for her

The good news is that Minx is fluent in orcish and she's nearby. Head back into the mine and find her. She's probably deeper inside, standing around being useless.
