Even though this is a necro, I might as well answer the OPs question since it's up front now XD
MTarget can do what you're looking for.
Make one macro that looks like this:
/mtarget set tank
/mtarget write
And then make a macro that looks like this:
/assist $tank
Hit the create template button with that macro selected. Now, you just have to target your tank and hit the first macro, which will replace all instances of $tank with that tank's name in the second macro. While updating it only works out of combat, that should be all you need.
I use a similar macro for tricks of the trade (see below):
/stopmacro
/mtarget set tricks
/mtarget write
#showtooltip Tricks of the Trade
/cast Tricks of the Trade
