Coming back: leveling difficulty and adding variety

I'm coming back to WoW after several years hiatus. I've been playing a little with the starter edition because I wanted to start completely over. I would like two things out of my leveling experience:
1. A decent amount of difficulty and to be able to take my time
2. Variety with one class if possible

1. I know that this is the antithesis to what everyone else wants. They want to level their alts to 90 as quickly as possible with as little effort. I would like to enjoy the game and would also like to have some difficulty. Blizzard already makes it tough for me to attempt higher level quests (lvl 20 mobs when i'm 15-17) because they don't like you get the quest until you are the appropriate level.
Are there ways that I can add some difficulty into my game?
I thought trying to solo dungeons as I level might be fun and difficulty. I've tried to do some elite soloing with my paladin and it is ridiculously easy; flash of light heals me to full in 1.5 sec and I gain the mana back almost instantly.
Not true. Not "everyone" wants a mindlessly easy game. I, for one, prefer being challenged. The problem is that WoW is so simplistic that the "difficulty" is really just a stat disparity (either between you and a mob or you and another player). There is no difficulty in the sense that you have to use your brain to figure things out.
Ok, that last comment isn't entirely accurate - there are some select parts in the game where you are met with a challenge. There's a little puzzle quest in the Badlands...but that's really all that comes to mind. Most of your questing is going to be "kill xx/xx mobs" or "collect xx/xx items".
The 1-60 questing has several options, all of them are fun at least for the first time. I've always liked darkshore, but the new alliance quests around stormwind are cool too. The quests in the ironforge area are OK but I'd say they are the least engaging of the bunch.
I also know that dungeons are no longer difficult with all the people in heirlooms, so I'll stay out of 5 mans.
Do yourself a favor and skip heirlooms. They ruin the experience...and you're right, dungeons are pretty easy. As a prot warrior I was able to solo most of them at my level and I was in run-of-the-mill green items.
I plan on spending time leveling professions and doing pet battles but I would like to avoid the mad rush to 90 that leveling feels like.
FYI gathering professions and pet battles yield a lot of XP. It's quite possible to level up just by gathering stuff and doing pet battles.
2. I am prone to altoholism and want to avoid that with my new account. I know that I can get variety with alts, but I would like to see a character all the way to 90 if I could without jumping between 3 or 4 characters. So which classes and specs have variety as you level? I noticed that the paladin gets some mechanic changing skills in the 30's where I can choose to do good single target damage or pull 3 mobs and switch to attacks that spread between 3 targets.
Finish what you start. The most diverse single class you can play is a druid without question. As a druid you can perform all roles in the game, although I would say that feral and guardian are similar while resto and balance are also similar in terms of play style.
Enhancement shaman is the most fun you'll have with any class or spec in the game in my opinion. That's my main.
While a frost mage looks interesting and fun, I know that eventually I'll be able to just shoot my target with frostbolt repeatedly and they'll die before they can get to me due to the frost debuff. There's no reason to use the various freezing mechanics other than to get more dps out of a fingers of frost > ice lance because kiting doesn't seem needed.
If you want to push yourself you'll have to start engaging in pvp. Computer-controlled enemies all follow the same basic routine (attack). They do not try to evade you or disrupt you for the most part. Players make for a much better challenge and you will need all of the tools you have to do well.
So what classes/specs have a good amount of variety in gameplay/mechanics as you level?
Things get "good" at level 60 for most classes, even better at 70. Once you hit 80 you have most of your key abilities so you'll have a good idea of how the classes work.

If you want some difficulty, try using only white items for a while- they're very inferior to the greens and blues that you get from quests and dungeons. By limiting the quality of the gear you have, you're limiting both the amount of damage you can do and the amount you can take.
