Trying to work out a duo with my fiance, suggestions?

After taking a break for about a year we've come back and want to jump right in with a group from level 1 with a fresh start, or at least without heirlooms (we'll still be buying bags and convenience things like that).
The problem is we have no idea what to play, or more accurately, we're having trouble narrowing it down to a single class each.
My fiance wants to play a healer/support character, specifically a priest, monk, or shaman.
I either want to play a tank, or, something that can at least hold aggro with pets effectively. We figure that kind of combo with a support/healer is perfect. I'm leaning towards warrior, hunter, or paladin at the moment. Maybe monk, maybe warlock.
The major thing we want to make sure of is that we start as the same race so we can level together immediately. We are just having trouble narrowing down our choices and would love some advice.

If you are questing, then doing tank-healer will slow you down quite a bit. Just two dps is more than enough to blow through quests without any problems. If you are a tank, or a pet class, and your friend is a healer, they will be very bored.
I would do Tauren Guardian- Feral druid for you.. and Shadow- Disc priest for your friend.... but I think you will find that a feral druid and a shadow priest will be very easy to level, and the shadow priest can throw a bubble on you for tough spots.. Once the priest gets to 50, then they can do Disc-atonement healing or just stay shadow.
Questing is very easy..any two specs doing it together will breeze through stuff. using a non-dps will slow you down.

Since you don't mention faction:
Alliance:
Night Elf/Worgen
Druid for your fiancée choosing resto/feral for questing/dungeons respectively. And Warrior for yourself, prot/arms.
Horde:
Orc/Undead/Blood Elf
priest for your fiancée, disc/shadow and deathknight blood/frost for you
I'd personally go for priest/dk myself, both good in 5.4 plus shadow priest and deathknight's theme well together. And if your into RP, priest makes a good partner for a fallen knight seeking redemption

Thanks for the ideas.
I did forget to mention a couple things, as you noticed, so here you go:
-Alliance
-pure PvE, mostly questing, sometimes instancing (we like to duo instances, it's hard but so fun).
-We are definitely playing a healer/tank combo, or a healer/pet class with tank combo.
She is still looking at:
Priest, shaman, maybe druid, maybe paladin. She does not want a paladin or druid, she has both already at pretty high level for soloing but she does want to be a very good single target healer. She isn't fond of melee healers though.
I am looking at:
Warrior, paladin, hunter, warlock. More than likely, if not a warrior or paladin, I'm looking at hunter over warlock since I know hunters better than warlocks.
Also, I tried monk, I do not like it, so that's out the window. Also, since we are starting at level 1, DK can't work.

You are both versatile, both put out good damage, shaman heals are very effective in either resto or ele spec and most importantly you won't be competing for gear.

Sounds like priest/warrior combo then maybe? pet classes wont tank recent content, threat wise or damage.
I'd advise steering clear of Paladin, their never in a good position balance wise anymore. As much as I wanted to like mine, the beat downs that class gets make me lose the will to log on with him. And you get to endure the bizarre blizzard balancing notion that if the majority of your class' population pick one talent over the other two, its obviously overpowered, and not the only sane choice. Still totally not angry about that........

It's a shame you don't like the Monk. A friend and I started new characters with MoP and duo'd tank and healer Monks (me tank, he healer) all the way up. It was incredibly good fun!

Get her to play a Druid, one class with 4 roles to tinker with while leveling (important when she gets to, say, level 50 and finds she dislikes a role -- don't have to reroll another toon).
Then you play a role that can DPS/Heal (since she may want to switch roles "just because").
Low level content doesn't need much tank if there's a healer to help.
I basically just level the toons by taking a level 90 into the dungeons to finish the dungeon quests (most XP found for leveling up with) quite quickly and turning in the quests (XP from them aren't affected by having a level 90 main helping, either). There's some levels that is missing dungeon quests, so that's best done via taking the toon to a higher level area and grinding. I take my level 80s into MoP zones and while going after warbringers get big chunks of XP just parking them in a safe area near them. Get her rep tokens; crafting mats; BoP gear...what more can you ask for? ;)
She might die a few more times, but she can get all those pretty trinkets to encourage her to get to 90...and a lot faster.
