The item quality of the dropped item does not correspond (much) with the quality of the learned battle pet. Especially for older pets, this simply depicts the rarity of the pet (the Hyacinth Macaw being epicly rare back then)
I agree this can be misleading.
However, new pet items added in MoP that are created by professions can even have a
random
quality - between rare and poor. It's quite annoying.
Regarding Epic Pets, there are
NONE
available to players. Even if they are unlocked later, it's via Pet Battle Stones, no pet item will give you an epic quality pet.

I am going to guess that you are relatively new to WoW, and so may not be familiar with the pets as they existed before Battle Pets were a thing.
Up until this expansion, the only companion pets you had were treated as items, that you would use once to learn how to summon that pet (and before that, they were items in your bags). You could never cage or sell them after you learned them or used them, they had no stats or abilities, and were not good for anything other than following you around. The pet-items at that time were assigned colors that were just generally indicative of the rarity (how hard to get it was) of the pet, and didn't mean much more than that. Based on that gradation, most vendor pets and other common pets (and even a few uncommon drops) are white items, many of the slightly less readily available ones are green, the harder to get pets would be blue, and the ultra-rare pets were purple. The reason that the Hyacinth Macaw was purple is it has a 1 in 10,000 drop rate, and which is the worst odds in the game for a drop pet. The reason the Darkmoon Rabbit is purple, is it took a raid group to just get one, from a mob on a significant spawn timer.
Since they created battle pets system, they set up rarities for all the old companion pets once they are learned that have nothing to do with the color of the item. All companion pets are at least Uncommon quality once learned, and many are rare. But it doesn't correspond to the item colors.
If you have been collecting battle pets, you should have noticed that all of the racial pets- things like the cats you buy in stormwind, the roach you buy in undercity, etc. are green once they are learned, even though the item is white. It should be apparent really early on that the item quality doesn't mean much about the battle pet quality on companion pets, because the easiest pets to get start off not matching that way.
In the future, I recommend that you read the database here before making any big purchases, and see what other people have to say. Also, if you keep up with the news posts and discussions, you would have a better sense about how things work in the game in general. I'm sorry for the wasted gold, though as a pet collector myself those are pretty prestigious to have and I would be happy about it. The rarity rating of the battle pet is indicative of what kind of stats it has, but since you can make any pet rare, most serious collectors look for pets that are rare in the sense that they're hard to find or really expensive.
But if you do want your gold back, you don't need blizzard or the original seller to give it to you. You can just put the pet in a cage and sell it on the AH for as much as you spent on it.

I am sure in future expansions they will offer ways to upgrade pets to epic, and maybe even legendary, for players. But I am pretty sure they have no plans to do so this expansion.(##RESPBREAK##)8##DELIM##ElhonnaDS##DELIM##

Also, and I don't mean this in a negative way, continuing from Elhonna's guess that you might be somewhat new to the game, it is likely you don't have that much gold yet, and while you didn't mention it, I assume you didn't spend all your gold, which in turn must mean you got

Hyacinth Macaws, still among the rarest pets around, for quite the affordable price. In your misfortune, you are still rather lucky.

I spent 10k on my Hyacinth Macaw, back in Wrath. According to the entry on wowhead, the average price across all servers currently is 13k. Depending on your server, you should be able to get somewhere in that range for them now.
