If it's a white item...don't buy it, you'll get better through questing.

In other words: You get better items from your quests or dungeons, don't waste your money on stuff from the vendors in the starting zones as they are not that useful. You want items that have a green border on them, not a white one.

As said, in general, you shouldn't be buying equipment from the vendors. The equipment they sell is far inferior to most other things you will come across. You will get better quality items (green/uncommon, or blue/rare) by killing monsters and looting them, doing quests or 5-man dungeons.
Depending on what class you play, there are different stats to aim for. Paladins (not Holy), Warriors, Death Knights aim for Strength as their main stat, Rogues, Feral Druids, Windwalker/Brewmaster Monks, Hunters and Enhancement Shamans go for Agility, Mages, Warlocks, Priests, Balance Druids, Elemental Shamans and all healer classes aim for Intellect (with healers also valuing Spirit). The amount of armor on the item doesn't matter too much in comparison to those main stats.
Hope this helps :)

By defense, do you mean armor?
Which class do you play and which specialization have you chosen?

Also, what items are you specifically looking at getting? I guarantee they're not as good as what you can get from running Shadowfang Keep over and over.
