Are you looking to be useful for your main, or just make money? Do you want dual crafting, or a crafting-gathering pair? Are you in it for the end game bonuses?
I think dual crafting is a mistake on a new account because unless you're an experienced AHer then you're not going to have the money to buy the mats needed to level the professions for a while. Plus most of the money from crafting professions is at the later stages, so there won't be a good return on investment at the start. Once you get closer to end game, feel free to switch to a dual crafting, but until then I don't think it's worth it.
The one exception to this is Enchanting/Tailoring, since the materials for both come from mob drops and you can level them as you level for the most part.
The end game bonuses are all roughly equal, just in different forms. Like the one from Tailoring is in the form of Attack Power for physical DPS I think. I think JC offers the widest variety of bonuses, since you can choose from a number of different gem cuts, but they're all roughly equal (at least for DPS) I think. But this would be something you'd want to check out in a guide first, if it's what you care about, since some classes do have recommend raiding professions.
I would say the consumable professions have the best steady income, so Alchemy, Enchanting, and JC. Since people will be replacing their gear and using their pots up. But beyond that, all professions have the ability to make money to some degree.
For you, if you are going to be a Mage, then I'd definitely go Tailoring/Enchanting. You can level them as you level (for the most part), you can use some of the stuff you make as you level, and once you open up Netherweave bags then Tailoring can make some pretty good money fairly early (especially for an armor crafting profession).
For a Pally, unless you care about using what you craft, I'd almost say Tailoring/Enchanting there too. But since you can't use anything but the bags from the Tailor, that opens up other combos; JC/Mining, Alc/Herb, etc. Then drop the gathering when you hit level cap and raise another crafting if you want.
In short; all professions are viable for all classes to some degree.

No, no, and no. In my opinion.
I didn't find it expensive or slow to level (especially since they added the Ghost Iron catch-up), but I also don't think it's a worthy investment.
Other than the high end 5.2 items, most all the things you can make will be easily replaced via LFR/raiding, and the 5.2 items are really expensive to make. The new 458 PvP gear is pretty cheap to make, but I haven't seen that selling for very much on my server.
I would imagine it does really well at the start of an expansion, if you're quick leveling it and getting your recipes, since everyone is gearing up. But now... ilvl 458 is easy to reach, and the increased drop rate in LFR (opened at 460) negates most of everything else you can make. ... In my opinion.
