I've just always been a boomkin. I know little about SP and my shammy I barely play, though I've never enjoyed her. Mostly because I don't care to throw totems down all the time (which happens less now in MoP but still enough to be annoying to me).

You should make your decision based on style as dps leaders come and go with patches and hotfixes.
Druid: You can be a laserchicken that uses the eclipse system (lunar and solar) to empower arcane and nature damage spells, respectively. Druid heals are HoT-centric, and the druid can battle rez.
Shaman: Elemental shamans pew pew lightning and fire. Resto healing is pretty varied, although your AoE is pretty strong with chain heal and healing rain. To play most effectively you'll want to learn how to properly time all your new totem CDs in MoP.
Priest: Shadow and holy or disc are very thematically different. Obviously as shadow you'll do a lot of shadow damage and dots are big part of your damage. As healer you can choose between holy (more 'traditional') and disc, which focuses on shielding damage.
