How do you guys and girls deal with having too many alts?

Sometimes I have a problem trying a new class, but have trouble deciding what race he or she should be (For example, if I was rolling a Warlock, I'd be unsure about making him a Forsaken, since due to the great synergy between the race and class, maybe 15-20% of all Forsaken are Warlocks. But don't quote me on that), what his professions are (if I already have a high-level Tailor/Enchanter, my troll priest, why should I train those on my Warlock?) where I should go after I leave the starting zone and the zone after it (Dwarves and Gnomes have similar leveling paths, as to Orcs and Trolls), etc. I try to fit everything together so I can experience as much as this game as possible, but things overlap or simply don't fit for one reason or another.
Do you have any advice?

First of all sorry for my bad English xD
After creating many characters and as you mentioned above many of the highest points it will be hard to find new ways to create new character without anyone noticed.
Sometime is good to look over the racials then making the class from the point of their original "vision" (lets call like that, as you mentioned the warlock and Forsaken example)
Many players prefer Tauren for Druid instead Troll, but Troll Druid is better for caster then DPS, or Orc DK is better then Goblin DK. Try to create with some good racials and try to fit the professions as what for you want that character. Farmer? Raider? PVPer?

I always thought a good rule of alt was 'Do whatever the %^&* you want.'
If you honestly put that much thought and effort into it, chances are you're not going to enjoy playing it as much as if you would have just went with the flow.
If you're considering a lock, maybe trying herb and alch. Both professions are still very good for that class, as for any class really. I have a low level Troll lock, which will probably be the last toon I reach max level because I'm not a fan of caster classes.

When I create alts, I do it with sort of a character type in mind already. For example, shortly before MOP hit, I was farming Crypts on my warrior for transmog gear and I became fascinated by the dranei monks. So I decided to be different than all my guildies/friends and create a dranei monk instead of a panda one. I already had her transmog ready before the game even hit. I also saved some mats for her profession and some gear for her to grow into.
That is the extent of my planning. I don't really consider what racials would do to the play style, as they would only be a minor addition anyway. The gift of the naruu buff just happened to fit because I decided to roll another tank. And I always make my tanks take mining for extra stam buff, because it is the only trade reward that seems to do anything imo.
In fact, its my advice that you take up a DIFFERENT profession for all your alts. Because atm I'm so burned out with mining its ridiculous. I'm enjoying engineering. But that mining...oh boy. I've leveled three toons max mining and working on the fourth one hurts without fast flying.

It depends on what you want out of your professions.
I'd advise against anyone taking co-dependent professions initially such as mining and engineering.
However having just started to level yet another alt and just taking mining and herbalism, then those professions are a literal goldmine.
I had a tasty 10k in the bank by level 72 having already spent 4k on Artisan flight and bought the Dark Phoenix mount. Plus Cold weather flying etc.. (This was from leveling my DK, a lot of gold very quickly)
By level 80, I have purchased Master flight and have 22k.
All this was done by listing everything I herbed or mined. no special effort but I would consider this toon set for a while with no special effort made.
You have a point, having co dependent professions can kill you. But as I already mentioned, my other toons are already miners, so I have access to mines even if I don't feel like leveling mining on a toon without fast flying XD I'm sure the lvl 5s dont appreciate me pilfering their copper at 90, but I think they'll get by.
Thats another good point though, if you make gathering professions only for your toons you can earn lots of gold. I have attempted this before on my paladin, and indeed, he is the only alt that I don't have to spend any gold on. HOWEVER, be very careful about selling all your mats. I would advise you , if you plan on going this route, to only sell the ones you can easily attain. For example, on my paladin I sold all of the fel iron I mined for a high price because apparently the market for it is in high demand (1 ore is 17-30g on my server). Then...well my monk needed fel iron. I'm kicking myself for getting rid of it. Just be wary, as you might want to make another alt one day that could use all the mats you are selling.
My poor hunter has 3 bags of enchanting mats just waiting, and my JC toon had 2 bags of gems I had to donate to my Guild Bank in order to make room for all the MoP items I'm getting.
