I have, maybe its just me but no class or spec combo is hard to learn if you put forth a half assed effort to learn it. And my druid is lvl61 so yes ive played it for a while.

Because the rotation "Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Mangle, Repeat" at level 61 is hard. Yap.
oh noes I didnt level him to 80 so I have no say in it right? least im not like some and say I leveled him to 20 and declared it too hard. Just face the fact that no class or combo is hard.

Elemental Shaman, Hunter and Mage all sound like good bets. I wouldn't go for a melee class because it involves more moving around as the tank needs to reposition mobs, and being in melee is generally far more dangerous than being at range.
Keep in mind that although some classes are more complex than others at 80, they all are very simple to level. If you like leveling alts, you shouldn't have to worry as much about picking the class as you would with your main.

Hello, I'm handicapped with limited hand movement. I want to maximize my potential in the game.
I don't know what your specific situation is, but would getting a gaming mouse with lots of macro-able buttons be a viable idea so that you could put all of your abilities (for just about any class) on your mouse hand. Or if the mouse hand is the issue, get one of those awesome trackball mice.. a lot of my coworkers with RSI use them and swear by it for anything.
To add the mouse idea many companies sell lefty versions of their mice, they might not be full blown 281908932 button gaming mice but extra buttons could still be useful. Might take some searching but it might be worth it.
I'd also suggest looking into macro options and custom keybinding. Cast Sequences, toggle spells and rearranging your keys could be very helpful in reducing your button load into a small easy to press group. Alt/shift/ctrl+ keybinds can be great space saving macros.
