You can start adding spell haste gear. You still want to be hit capped, but try swapping haste for crit. It makes a difference on long fights.
Only if you have the mana (consider mana gems, pots, and evocation) enough to do so though.
And I disagree with the premise that you should trade crit for haste, but then, I don't have the damage meters in support of either.

Don't forget that no matter how perfect your gear is, you need to be chain-casting properly to maximize your dps. This is *especially* true if you want to get any benefit from haste. Get Quartz or a similar addon that shows your lag in the castbar so you can start the next fireball as soon as possible.

When raiding, please remember this:
Spell hit (If capped, ignore it) > Spell haste > Spell damage > Spell crit
Remember they're buffing spell haste next patch.
